In ancient times, the wider area where Atalanti is located today was known as Opuntia Locrida, or Opus in abbreviation. On Mount Galanos, our Cabernet Franc was harvested with low yields. Irrigation system is not used in this vineyard in order to increase the concentration on the grape, hence its quality. This variety matures for 12 months in French oak barrels, and the wine produced is known as Opus XII. Enjoy it for another 25-30 years of its harvest.
Vinification: Red vinification under controlled conditions. Ageing for at least 12 months in new French, oak barrels. It remains for 36 months in the underground air-conditioned cellars at Hatzimichalis Estate for reducing aging.
Nose: Multi-layered aromatic ensemble with light red fruits, tomato leaves and light earthy notes that blend harmoniously with spices, cedar, vanilla and tobacco.
Mouth: The dense aromas of red fruits and vegetables make their presence felt in the mouth along with dried fruits, mainly raisins. The soft tannins, the complexity, the full body and the long aftertaste make it a dynamic wine.
Combined with: Grilled mushrooms, small bird hunting, pork with light sweet sauce, smoked steak, mild cheeses, olives
