Vinification: Classic method of white vinification from raisined grapes 10-12 days. It is aged in old oak barrels for at least 24 months. Vinsanto is the most genuine successor of “all wines”, as sun-dried wines were called in antiquity. During the Middle Ages the volcanic ancient Thira was named Santo Erini – Santorini and the “pass” of Thera took the name Vino Santo – Vinsanto, thus indicating its place of origin. In other words, it is one of the few “historical appellations of origin” that have remained.
Organoleptic elements: Orange-golden color with bright highlights. Rich and complex aromatic potential dominated by the aromas of dry and caramelized fruits.
Excellent structure and acidity, finesse and intense aftertaste.
Ageing ability: Unlimited.
Accompanies: Strong cheeses, dried fruits and sweets with chocolate, at 11° C.
