Idysma Dryos Chardonnay has written its own history as one of the top Greek Chardonnays. Vinified in oak barrels, round, with sweet aromas and richness, it covers the taste space, spreads on the palette and impresses with its mouthpiece.
The raw material comes from vineyards in Mikrochori and Kali Vrisi, areas with cold winters and refreshing northern winds in summer.
Vinification: Pre-fermentation cryoextraction so that the aromas of the grapes are transferred from the skins to the must. The fermentation starts in stainless steel tanks and on the seventh day the must and lees are divided proportionally into French oak barrels of 225 liters. The fermentation is completed in the barrels and then the method of manual bâtonnage (stirring of noble lees in kegs) is applied for about 6 months, a method that gives the wine volume, density and creamy feel.
Appearance : Light lemon color
Nose: Aromas of lemon, peach, apricot, melon, honeysuckle but also sandalwood, crème pâtissière, coconut, smoke and nut notes.
Mouth: The also sweet aromas of the mouth are contrasted by the high acidity of the wine. Full volume, moderate alcohol with the characteristic density of barrel-aged white wines. Mouth aromas reminiscent of quince, lemon and dried apricots. Persistent aftertaste with a tasty length.
Idysma Dryos Chardonnay is a rich wine that will go well with dishes with a correspondingly rich character. It will highlight its virtues next to dishes such as chicken ala crème, mussels with mustard sauce, fried schnitzel, French quiche and wonderful salmon tarts. A salmon fillet quenched with vodka and all kinds of risotto will be an ideal match for the wine. The wine also works ideally with dishes of rustic exuberance such as moussaka, while it will always compensate us next to fine fish and white meat fillets.
