The wine, after fermentation with the native yeasts from the vine, matures for 24 months in used oak barrels derived from their use in white and ros\u00e9 wine of the Moschopolis series. It is bottled unfiltered to maintain all its quality characteristics.<\/p>\n
Bright and elegant, with elegant sweet fruits on the nose, full of rich and intense berry and red floral notes. Light earthy and metallic notes will gradually appear with aging. Bright red color with light purple highlights. The palate is clean and elegant, bringing cherry fruit with a robust, spicy and mouthwatering tannic structure. It maintains significant concentration and structure to reward a long-term aging.<\/p>\n
This is a culinary Pinot Noir that combines wonderfully with duck and other poultry and game and, of course, stewed. It will go well with grilled quail, chicken or pork, but also with fatty fish such as salmon and tuna. Traditional Greek dishes from Macedonian cuisine, including dried fruits such as plum or figs, are also in its range.
