The Boon Vat 31 is a 6 year old Lambic. It was
\nmanufactured on November 30, 2015 and bottled on May 14, 2020.
\nIt was released in 375ml bottles and its alcoholic strength is 8.5%.
\nA delicate, soft and exquisite Oude Geuze. It has a delicate shine and a
\npleasant nose resembling cognac. The velvety, soft yet firm
\naroma with notes of apricot and nuts is supported by a
\npure oak character.
\nFoeder #31 is a large oak barrel,
\nmade between 1905 and 1908 by Bodenheim from
\nKassel (Germany). It arrived at a Brussels Lambic brewery in
\n1919 as part of a large batch of material sent to Belgium as
\ncompensation for “war losses between ’14-’18”. This particular
\nbarrel remained in this old Lambic brewery until 1988 and
\nwas then sold to Brouwerij Boon along with about 20 more
\nbarrels. These barrels were originally used to mature
\n1-year-old Lambic for Oude Geuze Boon. By 1992, the barrels that
\nprovided the best lambic were finally destined for Geuze Mariage Parfait’s production
