An aged smoked wine of the Xinomavro variety, selected from specific vineyards that meet strict quality criteria. Having inherited multiple and successive distinctions in competitions and tastings, it is the flagship of Xinomavro of Naoussa Zone.
Vinification: Classic method of red vinification with modern techniques that enhance the dynamics of the variety. Fermentation is completed in stainless steel tanks at 28 – 30°C. Extraction of the paint takes 5 – 7 days. Malolactic fermentation follows alcoholic fermentation.
Aging: 18 months in the barrel and 6 months in the bottle.
Serving temperature: 16° – 18°C
It ages for 5 to 8 years.
Orgakoleptic Characteristics: Deep red with fire-blonde highlights. Characteristic bouquet of aromas of dried fruits, cinnamon and a sense of wood. By shaking the wine, aromas of vanilla, tomato, olive and chocolate are felt. Full of wine with rich body, soft with aftertaste of black fruits and toned tannins.
Accompaniments: Ideal lamb, red meat and spicy cheeses.
