Knowledge exchanges, countless tastings, and passionate discussions between Alexandre Gabriel and Liam F. Costello, of Rum Co., from Fiji, led to this rum. Distilled entirely in triple column still, after 5 days of molasses fermentation and aging for 14 years in Bourbon barrels, in the mild climate of Fiji Islands and 1 year in French oak barrels of Ferrand, in the cellars of the house give us tremendous taste characteristics. On the nose it initially has a fruity and spicy profile, with cooked apples and plums. Then it is denatured into the aromas of amber syrup, pear, vanilla and nutmeg. The glass is strongly dominated by ginger, cocoa and plum.
