Vinification: Harvest very early in the morning and transportation to the winery by refrigerated truck. Cryoextraction in chardonnay and malagouzia for 8 hours at 10 °C. Controlled fermentation temperature 14-17 °C and badonaz at the end of fermentation.
Organoleptic Characteristics: Explosive nose with aromas of gentle vegetativeness of yellow fruit in combination of ripe pineapple, melon and very pure peach. Mouth full that follows in intensity the nose with intense aroma and sweetness.
Enjoy the… with foods similar to color shades such as fish, shellfish, shrimps, crayfish, chicken, turkey, veal and with white or blonde and light colored sauces. Rich aromatic salads. Also with pasta accompanied by white sauce and cold cuts dishes.
Recommended cheese: Mozzarella & goat’s milk cheeses, soft yellow cheeses. Serving temperature: 8-12 °C.
