Area / Vineyard: Amyntaio wine-growing zone. “Turtles” at an altitude of 640-650 meters, with northwest orientation, “seeing” Mount Voras.
Vinification / Aging: Destemming, absence of crush, cryoextraction in controlled environment, alcoholic fermentation at rated temperatures. Stay the wine for 3 months on its lees with periodic stirring. Initially for 12 months in selected new French fine grain barrels of “medium” burning and then for at least 15 months in the bottle before placing on the market.
Taste characteristics: Bright, deep ruby color with violet highlights. Intense and complex bouquet, earthy, with notes of red forest fruits and pepper.
Taste generous, velvety, round, balanced, full-bodied, with notes of vanilla and mocha. In its finish, it is characterized by its balanced and discreet tanninity, the long stay of its aromas in which butter candy dominates. An excellent ageing wine.
Harmony: It is harmoniously combined with juicy red meats, fleshy mushrooms grilled, lamb in the oven, “feather” game, and mature soft cheeses, of medium intensity.
Enjoy it at 16-18° C.
