Area / Vineyard:
Amyntaio wine-growing zone.
“Hedgehog” at an altitude of 690 meters, facing north, overlooking the lake of Petres and Mount Voras.
Vinification / Aging:
Pre-fermentation cryoextraction in an inert environment, alcoholic fermentation at controlled temperature. Stay the wine for 8 months on its lees with periodic stirring. Initially for 12 months in selected new French oak barrels of medium porous “white” burning and then for at least 14 months in the bottle before placing on the market.
Taste characteristics:
Deep red color. Complex bouquet with characteristic aromas of flowers and spices (vanilla, pepper, cloves), with tones of ripe raspberry, sun-dried tomatoes and dried fig. Full mouth, with vanilla aroma, rich structure, balanced acidity and notes of well-crafted barrel, in the aftertaste intense aroma of quinces.
Harmony:
It is harmoniously combined with juicy grilled meats, country sausages, red roasted peppers, hare stew, braised meats, village pies and spicy hard cheeses.
Ideal enjoyment at 16-18° C.
