In the Vlach local dialect of Metsovo, inima means heart. For Katogi Averoff the meaning of the word Inima is deeper and more substantial. It expresses the soul and captures the mood, fun and passion of all the people involved in the wine production process.
Features
Vivid red color with crimson highlights. In its aromatic character, there are notes of red fruits with emphasis on raspberries and blueberries, combined with earthy aromas. In the mouth shows rich youthful features. It is equally aromatic, with an elegant sense of acidity and exuberant taste. A wine with a charming personality and a strong fruity aftertaste.
Vinification
Pre-fermentation extraction at a temperature of 12 – 15ºC for seven days. Then fermentation follows for about twenty days at temperatures of 25 – 30ºC. The new wine is transported in French oak barrels of 300 lt, for the realization of malolactic fermentation, where it remains with its muds for a period of two months. After the end of malolactic milking, deworming follows and continuation of aging for another six months.
