Area / Vineyard:
Amyntaio wine-growing zone.
” Ambelia”, altitude 630-690 meters, facing north, “seeing” the lake of Petres and Mount Voras.
Vinification / Ageing:
Destemming, pre-fermentation cryoextraction and then classic red vinification at perfectly controlled temperatures.
Aging:
36 months in specially selected French oak barrels. 200% new barrel (18 months + 18 months). No treatment and filtration before bottling and additional aging 18 months in the bottle.
Taste characteristics:
Rich, with pronounced characteristics of ripe red fruits of the forest. Complex bouquet with typical and complex aromas. Especially rich and highly structured mature tannins. Taste balance at high levels that ends with a particularly long aftertaste. Aeration enhances its organoleptic characteristics and for this reason it is recommended to decant it at least one hour before serving.
Harmony:
It is combined with rich meats, grilled or with rich sauces, cooked with vegetables, bulbs and wine. Hunting marinade, combined with chestnuts and plums. Fatty or aged cheeses of intense and rich taste. Ideal enjoyment at 16-18° C.
