Area / Vineyard: Amyntaio wine-growing zone. “Vines” and “Horses”.
Vinification / Aging: Destemming, absence of crushing, pre-fermentation cryoextraction, alcoholic fermentation at increasing temperatures. Stay the wine for a long time on its lees with periodic stirring. 18 months in new French oak barrels and 12 months in the bottle before its commercial launch. It is not filtered and undergoes absolutely no processing before bottling.
Taste characteristics: Bright, deep ruby color with violet highlights. Intense and complex bouquet, earthy, with notes of red fruits, dried plum and pepper. Taste generous, velvety, round, balanced, full, with notes of vanilla, oak and mocha. The aftertaste is characterized by the taste balance and ripe tannins, the long stay of its aromas in which notes of spices and dried fruits of the forest predominate. An excellent ageing wine.
Harmony: It is harmoniously combined with red meats, grilled or with rich sauces, sweet or spicy, furry game and meat pies. Cretan gruyere, batzos or kefalograviera sahanaki.
Ideal enjoyment at 16-18º C.
