The realization of the harvest during the night, when the grapes are at optimal ripeness, aims to maintain the aromatic and phenolic potential of each variety. The correct application of extraction in pre- and post-fermentation stages helps to extract this potential. Then, the juice is transferred by gravity to oak barrels, where it remains for 12 months, while its maturation includes 8-10 months in the bottle.
Attractive purple color. Complex bouquet consisting of aromas of jam, plum, notes of caramel butter and coffee, to end up with a discreet background of spices. Its mouth is distinguished by its balanced marriage of alcohol, acidity and tannins that gives it harmony and volume, while its long-lasting aftertaste is dominated by overripe fruits and cinnamon.
Ideal serving temperature: 17-18οC. It combines wonderfully with meats cooked with spicy sauces, game and yellow cheeses. It is a wine with a high ageing potential. It is recommended to use a decanter.
