Vineyard: Organic, dry, linear privately owned, with an acre yield of 400-500 kg per acre.
Terrain: Sandy hills with stony subsoil at a distance of 3 km. from the sea.
Climate: Mediterranean with east winds, meltemia, and the temperature difference day to night is at 13-15 degrees C.
Vintage: By hand at the end of August.
Vinification: Pre-fermentation cryoextraction at low temperature and fermentation with indigenous yeasts in amphora. During fermentation it is bottled and fermentation continues in the bottle. It is not filtered and does not undergo any treatment before bottling.
Organoleptic Characteristics: Cloudy light gold with persistent microscopic foaming. High intensities, acidity, mineral dimension, chalk and limestone. Pasta expressions, with bread crust and brioche , floral, white fleshy stone fruits, notes of spices and herbs.
