Nychteri is one of the most peculiar and traditional wines of the island of Santorini, where grapes of high ripeness are harvested in the early morning hours. The result is an incredibly full, mature, complex, warm, with great aging potential. The lost link between Santorini and a dry Madeira. Both can age for several decades.
Vinification: Overripe grapes. The deboned grapes were cryoextracted for 12 hours. Fermentation took place with native yeasts under controlled temperature up to 18°C.
Maturation: In French oak barrels of different capacity for 12 months.
Bottling: Unfiltered.
Organoleptic characteristics: Bright golden color. Aromas of ripe stone fruits and lemon. In the mouth it is lively with a full body and a mineral aftertaste.
Serving suggestion: Shellfish, meat with white sauce, grilled meat, as well as ripe fatty cheeses.
Recommended serving temperature: at 14°-16°C
It can be aged for more than 10 years.
