Nychteri is the top version of Assyrtiko of Santorini, the wine traditionally enjoyed by winemakers, their own people and the captains of the island. For their own wine, therefore, they harvested the grape overripe at the end of the harvest. Cutting by hand, loading on the donkeys and by the time the fruit reached Canava, night had fallen. They unloaded it in the wine press, pressed it very lightly and fell to rest, allowing the weight of the grape itself to
continue “pressing”. Early in the morning, the prorogated juice was already in the flax, having extracted from the marcs due to its stay with them overnight. This process gave Nychteri the name that accompanied it in history, as a wine strong in alcohol and with residual sugars.
Vinification: Overripe harvest where wine with high alcoholic strength and residual sugars is produced. Matures in old oak barrels for 20 months with lees
Appearance: Intense golden color
Nose: Complex, with aromas of ripe citrus, honey, nuts and herbs
Mouth: Rich, oily with complex aromas of ripe citrus fruits and herbs. The acidity balances with the sugars that give the special character to Nychteri.
Long aftertaste
Accompaniments: Duck with citrus sauce, casserole roasts and aged cheeses
