The Four Lakes is a wine with a crystal golden yellow color. Its bouquet blends the typical floral aromas of Gewurztraminer with the notes of lemon, pineapple and coriander of Chardonnay. The velvety, oily aftertaste prevails in the mouth, supported by the volume and duration of acidity.
The Four Lakes are produced from grapes grown at an altitude of 600 meters. The vineyard has a total area of 165 acres and is located in the area of Ag. Panteleimon, within the boundaries of the Amyntaio wine-growing zone. The yield per hectare of the vineyard does not exceed 800 kg for Roditis and Xinomavro, 700 kg for Chardonnay and 600 kg for Gewürztraminer. The poor and sandy soils offer the opportunity to produce wines with exceptional finesse and rich aroma. The area is characterized by cold winters and hot summers, but also the presence of four lakes, which create a mild microclimate, ideal for the cultivation of white varieties. These four lakes give the wine its name.
During vinification, the method of pre-fermentation extraction (skin contact) is followed for all varieties except Xinomavro, which, when it participates in the blend, is vinified with the blanc de noir method. Then follows leaching and grafting with pure culture from selected yeasts, which express the aromatic typicality of each variety. The fermentation and maturation of 50% of the total amount of Chardonnay takes place in oak barrels by stirring the lees, a process that gives volume, oiliness and complexity. The rest of Chardonnay, as well as the rest of the varieties are fermented in stainless steel tanks. The final blend is made in early February.
Maturation: Only 50% of the total Chardonnay quantity for 4 months in new French 225L barrels.
