The Kir-Yianni vineyard in Naoussa is located at an altitude of 120-280., at the foot of eastern Vermio. The climate of the region is Mediterranean and is characterized by abundant rains in winter and mild drought in summer. The terrain is a mosaic of various types with moderate slopes and panoramic orientation. For this reason, the total area of 550 acres is divided into 42 parcels, each with autonomous cultivation care. For Ramnista, Xinomavra are selected from light sandy loam pieces with a relatively low pH.
The sorting of Xinomavro is a crucial point for the quality of the final product. The selective harvest applied by hand, allows us to achieve the desired degree of maturity of the rail. In the raw material of Ramnista we practice a pre-fermentation extraction period of 6 days at 8-10ο C. In the 2017 harvest fermentation took place in wooden buckets of 5 tons (French oak) at perfectly controlled temperatures. In order to enhance the color and taste intensity of the wine, the method of stirring marc and must with an automatic pigeage is applied. The final blend was created during the 5-6 month of maturation of the candidate ingredients while the total aging time in oak barrels is 16 months.
Maturation: 16 months in French and American oak barrels of 225 and 500 liters. Further reducing ageing in the bottle for 12 months until market launch
Aromas of strawberry, cherry and rose, combined with elegant notes of vanilla from the barrel. Despite its youth, the aromatic power and structure of tannins reveal a wine with character and great ageing potential, a product of a great year.
Flavor Combinations: Complex aromas, robust tannins structure and velvety acidity. A great match for red meat and game.
