Deep red and compact. Red currant, cherry jam, mint chocolates, ink and cedar are just some of the aromas that one can recognize. . Fleshy, rich, almost exuberant, with plenty of fruit that supports well-incorporated tannins. The theoretically high presence of alcohol is compensated by acidity and is expressed mainly as sweetness and volume.
It accompanies red meats grilled or cooked, large poultry, such as turkey or goose, roasted, furry game, roasted piglet, soft cheeses with crusts .
Long extraction of 20 days, aging in French oak barrels, of which 40% are new.
It will continue to evolve for at least 15-20 years from the harvest year.
