Xinomavro comes from mountainous vineyards of Amyntaio while Merlot and Syrah come from selected vineyards in the Prefecture of Florina. The vineyards are located in the Amyntaio viticultural zone, at an altitude of 600-700 m. Their soils are sandy and poor, contributing to the production of wines with exceptional finesse and rich aroma. The climate of the region is continental, with cold winters and hot summers, which becomes milder thanks to the presence of four lakes.Pre-fermentation extraction is applied to unripe grapes, at a temperature of 12°C and in the presence of inert gas, the duration of which ranges from 2 to 5 days. The fermentation temperature is 20-22°C. The blend does not undergo evolution in oak barrel, but only in tanks, where we aim to reproduce the barrel environment through the application of microoxygenation. Malolactic fermentation takes place at 100% of the volume of the blend. The wine is bottled and calmed in the bottle for 1-2 months.
The beautiful aromas of red forest fruits and cherry, sweet spices enriched by delicate notes of rose. The mouth is balanced, round, with soft tannins and an aromatic, fruity aftertaste.
It goes great with pasta, stews and vegetarians, but also grilled meats. It may be aged for 5 years.
