Vinification: The grapes after the sorting table are led to stainless steel tanks where the correct application of extraction in pre- and post-fermentation stage, helps to extract this potential. Then, the juice is transferred by gravity to oak barrels, where it remains for 18 months, while its maturation includes 18 months in the bottle.
Characteristics of the wine: Deep red color with intense violet highlights. Complex aromatic palette where the primary aromas of the variety (notes of small red fruits such as cherry, raspberry) are combined with botanical characters (basil, thyme) and notes of vanilla and coffee, the result of many months of aging in oak barrels. Rich and balanced mouth, oily, with a robust structure that gives it great durability over time. Attractive and long-lasting aftertaste that highlights the taste characteristics of the wine.
Serving recommendations: Ideally serve at 17-18οC along with hard smoked cheeses, meats cooked with spicy sauces and game. It is a wine with a high ageing potential. It is recommended to use a decanter.
