Vineyard: The vineyards are located around the village of Fytia at an altitude of 450-650 meters. They are certified organic, dry and 25 years old.
Soils: Light composition, stony soils based on slate and granite.
Microclimate: The climate in the zone is characterized as warm continental with winds from the sea and from Mount Vermio on the other hand playing a catalytic role during the ripening period, keeping grape temperatures at low levels for the season. In this case, high-altitude vineyards maintain even lower average temperatures due to the greater temperature difference between day and night and the colder and stronger winds.
Vinification: The extraction lasts for 18 days with 20% whole, whole cluster. Fermentation begins with native yeasts and lasts for 1 to 3 months.
Maturation: 8 months in French oak tanks.
