It is the result of the combination of two excellent varieties, Assyrtiko and Semillon (Bordeaux variety), planted in the hottest and barren part of the vineyard of the Estate, on the slopes of Mount Pangaion.The aromatic expression of Semillon with its great aging potential, is harmoniously complemented by the strength, structure and excellent acidity that gives Assyrtiko.After a short duration of pre-fermentation extraction of the grapes it is fermented in French oak Barrels. Its stay for a few months in its wooden (oak) house and its contact with the lees highlight its varietal character and give it a rich and complex taste.
It has a bright yellow color with light green highlights. Its nose is elegant, expressive, with aromas of apricot and honey coexisting with notes of tropical fruits and citrus. All of the above are surrounded by a delicate barrel feel with elements of nuts and vanilla. Its rich, complex, complex taste , perfectly balances with the richness of aromas of fruits, honey, nuts and its refreshing acidity.
It can be aged for up to 8 years, where it develops a special oiliness and an excellent bouquet of aromas. It accompanies large grilled fish, risotto with seafood, sushi, duck or stuffed turkey, rich cheese soufflé.
