Vinification: A special white vinification technique is used to highlight the characteristics of the variety and the unique terroir of the region. The grapes are cold-processed, followed by short cryoextraction and then a minimally invasive fermentation. The final product only goes through a light filtering in order to preserve the character of the variety in full.
Organoleptic characteristics: White-yellow color with a characteristic aroma of quince, sweet citrus fruits and intense mineral elements. Full body, refreshing acidity and a long aftertaste.
Accompaniments: Fish and seafood dishes of Greek cuisine, white meat, soft cheeses and grilled vegetables.
