Vinification: The grapes after the sorting table are led to stainless steel tanks, where the correct application of extraction in pre- and post-fermentation stage, helps to extract the potential of the variety. Then, the juice is transferred by gravity to oak barrels, where it remains for 18 months, while its maturation is supplemented by a further 18 months stay in the bottle.
Characteristics of the wine: Intense ruby color with menexeden highlights. Dense aroma of small fruits (blackcurrant, raspberry) combined with sweet characters (dried plum, jam) and notes of nuts while, in the background, the characteristic metallicity of the variety. Filled in the mouth, slightly oily, with cool acidity and vivid, yet elegant, tannins that give it a prospect of durability. Intense aftertaste of black fruits and licorice that lasts.
Serving recommendations: Ideally serve at 16 -18οC accompanying yellow cheeses, meats cooked with spicy sauces and game. It is a wine with a high ageing potential. It is recommended to use a decanter.
