Vineyard: The vineyards are located around the village of Fytia at an altitude of 450-650 meters. They are certified organic, arid and young.

Microclimate: The climate in the zone is characterized as warm-continental with winds from the sea and from Mount Vermio on the other hand playing a catalytic role during the ripening period, keeping grape temperatures at low levels for the season. In this case, high-altitude vineyards maintain even lower average temperatures due to the greater temperature difference between day and night and the colder and stronger winds.
Vinification: The extraction takes 10 hours. Fermentation begins with native yeasts and lasts 5 to 6 months.
Maturation: Ferments in French oak barrels 5th use (500 liters) where it remains for 5 months.
