VINIFICATION: The grapes have been deliberately selected from the Amyntaio viticultural zone to achieve the character we want. The grapes are harvested by hand and placed in cold rooms at a very low temperature to preserve the delicate aromatic characteristics. After light pressing, where we keep a small percentage of whole bunch, the grapes are led to a pneumatic press for 12-hour cryoextraction. The fermentation temperature is kept at a very low temperature and remains little on the lees.
FEATURES: Bright, crystalline, pale greenish-yellow color. Fresh aromatic character reminiscent of lemon and citrus with strong notes of peach and grapefruit at the end. Freshness with refreshing acidity and natural minerality, perfectly balanced, full of wine with a long aftertaste framed by a pleasant peppery character.
SERVING TEMPERATURES: 8-10 °C
HARMONY FLAVORS: Ideal with fish and seafood, grilled vegetables, green salads with strong herbs and prosciutto, a variety of cheeses, fresh seasonal fruits.
