Location: Partheni, Heraklion Crete
Vineyard: Mountain Vineyards of the Estate at an altitude of 600 meters.
Manual harvest: end of August
Alcoholic strength: 12% by vol.
Vinification: The method of cryoextraction is applied for 4 to 6 hours at 4°C. After pressing
and leaching, fermentation follows in stainless steel tanks
of controlled temperature (13-16°C) and maturation on fine lees with the battonage method.
Organoleptic Characteristics: White-yellow with light green highlights.
Aromas of dried lotus, intense peach, apricot, green apple and quince.
Exuberant in the mouth with aromas of fresh and dried fruits, with lime flavors and lemon zest. Elongated aftertaste with a bitter mandarin character.
Harmony of Flavors: Smoked and rich in fatty fish, shellfish, white meats and mature cheeses.
Served between: 12-13°C
